Our favorite Winter harvests
Our Island has tough winters, but some vegetables manage to stay alive through even our coldest nights. Click the images to read more and get the seeds.
There's many types of carrots out there, but this one just grows so well in our climate! We've dug these up from under the snow in December, and they're so sweet and crunchy (especially after the first frost) !
Leeks stand proud and tall all winter, and start growing again in early spring. Harvest the biggest ones in the summer and leave the smaller ones to harvest the next spring. Or wait for summer again, and they will grow beauuutiful big flower-balls!
Red beets are just straight up gorgeous, everyone knows it. We bake them or grate them, and even use them in our tea blends and beer. They tolerate a lot of frost and store really well - for months - in sand (-y soil) or moist peat.
Kale is a tough one and can survive long and ice cold winters. The leaves even get better after a night of frost! Kale is packed(!) with nutrients and fiber, exactly what we need to stay healthy in the dark season of flu and sickness.

The Queen Herself: Calendula! They come in all colors, but this orange is the most magical hue I've ever seen. She lights up the garden and carries great health benefits.
Lulu's favorite snack: Nasturtiums have gorgeous edible flowers that give a peppery kick to salads, sushi or Marit's green sauce. This variety has beautiful variegated leaves that taste just as delicious.
These blue Cornflowers make everybody happy! Sprinkle the petals on sweet or savory dishes for a dash of color - the mild flavor pairs with almost anything. And I promise you, this special blue hue is much more magical IRL.
Anne fell in love with these last summer: Signet Marigolds - a cutiepie with a magical smell of something like citrus, coriander and honey. We use these for herbal tea blends, syrups and beer.

Our favorite Spring Greens
These huge fuckers are new to me, but wow! Instant crush! They don't need much and grow to be the size of huge cucumbers. They're crispy and juicy at the same time, and much milder than most radishes. They don't get soggy when cooked and are a lot more filling then most of the Nordic spring greens.
We'll never grow normal spring onions again, now that we have a bed full of perennial Welsh onions! They're the first to appear in spring and we can keep harvesting them all season long. A must-have!
Purple Frills (mustard greens) are straight up delicious and grow well in early spring (or autumn). Peppery, slightly nutty and veeery healthy! Plus, they look like tiny little ferns or huge mosses - so cute and pretty!
My friend Magnus once gifted me some unfamiliar Japanese seeds, which turned out to be these happy flowers! The first leaves are delicious in spring, and later on the flowers can be eaten too.
